How to Make Potato Latkes—Yum Yum!

What is Hanukkah without potato latkes (pancakes)? If you’d like to try your hand at making this traditional Hanukkah food, here’s a good recipe. It’s easy, and the results are delicious. The secret is to eliminate as much moisture as possible from the potatoes before mixing them with the other ingredients and frying them up in lots of oil. Happy Hanukkah!

Ingredients

• 2 pounds (about 5 medium) raw, peeled, grated potatoes that you’ve squeezed the life out of to remove the liquid

• 1 small, grated onion

• 1 teaspoon salt

• ¼ teaspoon black pepper

• 2 beaten eggs

• ¼ to ½ cup flour or matzoh meal

• Oil for frying

Directions

In a large bowl, mix the first five ingredients together. Incorporate the flour or matzoh meal. In a large skillet, heat oil to medium-high. Using a large spoon, place scoops of the mixture into the oil and flatten with the back of the spoon.

Fry the latkes for 3 to 4 minutes until golden brown before turning. Flip them over and fry them for another 3 to 4 minutes.

Drain on paper towels. Serve warm with applesauce or sour cream. Makes about 18 latkes.
